Ingredients

  • 2 large chicken breasts
  • 2 eggs
  • 1/3 cup gluten free breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat air fryer to 380°F.
  2. Cut chicken breasts in half widthwise to make 4 thin pieces.
  3. Whisk eggs in a shallow bowl.
  4. Combine breadcrumbs, parmesan, salt, pepper, and spices in another shallow bowl.
  5. Dip chicken in egg mixture, then breadcrumb mixture to coat evenly.
  6. Place in air fryer basket in a single layer; spray lightly with oil if needed.
  7. Air fry 15 minutes, flipping halfway, until internal temperature reaches 165°F.
  8. Serve with pasta, salads, veggies, or rice.
