- 4 chicken thighs, bone-in and skin-on
- 2 tbsp olive oil
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes
- 1/2 cup BBQ sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Combine olive oil, garlic powder, onion powder, salt, and pepper in a bowl. Coat chicken evenly.
- Toss broccoli, bell peppers, zucchini, and cherry tomatoes with olive oil, salt, and pepper in a separate bowl.
- Place chicken in an oven-safe pan, scatter vegetables around, and drizzle BBQ sauce over chicken.
- Bake 35–40 minutes until chicken reaches 165°F internal temperature. Garnish with parsley and serve.
Notes
- For extra flavor, marinate chicken overnight.
- Air fryer can be used for quicker cooking.
