  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese (or feta)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Toss chicken, zucchini, cherry tomatoes, red onion, and garlic with olive oil and Mediterranean seasoning.
  3. Spread mixture evenly in prepared dish and sprinkle with mozzarella and Parmesan cheese.
  4. Cover with foil and bake 20 minutes. Remove foil and bake 10-15 more minutes until cheese is golden and chicken reaches 165°F (75°C).
  5. Garnish with parsley and serve warm, optionally with rice, quinoa, or crusty bread.
