- 7 tbsp unsalted butter, softened
- 3/4 cup packed light or dark brown sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup old-fashioned oats
- 1 can (14 oz) full-fat sweetened condensed milk
- 6 tbsp lemon juice (from ~2 lemons)
- 1 tbsp lemon zest (from ~1 lemon)
Instructions
- Preheat oven to 350°F (177°C). Line an 8-inch square pan with parchment paper.
- Beat butter and brown sugar until combined. Add vanilla and beat 30 seconds.
- Mix in flour, baking powder, salt, and oats until crumbly.
- Press slightly more than half of mixture into pan for crust. Bake 12 minutes.
- Whisk sweetened condensed milk, lemon juice, and zest for filling. Pour over warm crust.
- Sprinkle remaining crumble on top and bake 22–25 minutes until edges lightly golden and center set.
- Cool completely, lift with parchment, slice into squares.
- Store at room temp up to 2 days, refrigerate up to 1 week, or freeze up to 3 months.
Notes
- Use full-fat sweetened condensed milk for proper filling set.
- Double recipe in a 9×13-inch pan, increase pre-bake to 18 minutes, bake filled bars 35 minutes.
