- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 2 cups water
- 1 cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons ginger, minced
- 4 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 1 tablespoon gochujang (Korean chili paste)
- 1 pound fresh or dried noodles (udon or ramen)
- 3 green onions, sliced for garnish
- Sesame seeds, optional
- Fresh cilantro, optional
Instructions
- Season beef with black pepper.
- In a bowl, mix beef broth, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until sugar dissolves.
- Add beef and sauce to a slow cooker.
- Cook on low 6–8 hours or high 3–4 hours until beef is tender.
- 15–20 minutes before serving, cook noodles per package instructions; drain.
- Add cooked noodles to slow cooker; stir to combine and absorb some broth.
- Serve in bowls, garnished with green onions, sesame seeds, and cilantro if desired.
Notes
- Optional: adjust spiciness by adding more or less gochujang.
- Garnish enhances flavor and presentation.
