  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups water
  • 1 cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons ginger, minced
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 pound fresh or dried noodles (udon or ramen)
  • 3 green onions, sliced for garnish
  • Sesame seeds, optional
  • Fresh cilantro, optional

Instructions

  1. Season beef with black pepper.
  2. In a bowl, mix beef broth, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until sugar dissolves.
  3. Add beef and sauce to a slow cooker.
  4. Cook on low 6–8 hours or high 3–4 hours until beef is tender.
  5. 15–20 minutes before serving, cook noodles per package instructions; drain.
  6. Add cooked noodles to slow cooker; stir to combine and absorb some broth.
  7. Serve in bowls, garnished with green onions, sesame seeds, and cilantro if desired.

Notes

  • Optional: adjust spiciness by adding more or less gochujang.
