- 4 boneless, skinless chicken breasts
- 1/2 cup fresh lime juice
- 1/2 cup fresh orange juice
- 2 tablespoons fresh lemon juice
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Zest of 1 lime
- Zest of 1 orange
- Fresh cilantro, for garnish
Instructions
- In a medium bowl, whisk together lime juice, orange juice, lemon juice, soy sauce, olive oil, honey, garlic, cumin, coriander, salt, pepper, lime zest, and orange zest.
- Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, ensuring even coating. Cover and refrigerate for at least 2 hours or overnight.
- Preheat grill to medium-high heat and lightly oil the grates.
- Remove chicken from marinade and discard excess marinade.
- Grill chicken for 6–7 minutes per side, until internal temperature reaches 165°F (75°C) and grill marks appear.
- Remove from grill and let rest for 5 minutes.
- Garnish with fresh cilantro and serve.
Notes
- Add red pepper flakes to the marinade for a touch of heat.
- Pairs well with grilled pineapple, mango salsa, or coconut rice.
- Chicken can also be cooked on a stovetop grill pan.
- Pound chicken to even thickness for consistent cooking.
