A tender, juicy chicken meatloaf with a flavorful garlic Parmesan glaze, perfect for family dinners or meal prep.

Ingredients

  • 2 pounds ground chicken, turkey, or lean pork
  • 1 cup Parmesan cheese, shredded
  • 1 cup panko or regular breadcrumbs
  • 2 large eggs
  • 4 cloves minced garlic
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup whole milk or plant milk
  • 2 tbsp unsalted butter for glaze
  • For the Glaze: 1/4 cup Parmesan, 2 tbsp fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a loaf pan or lined baking sheet.
  2. In a large bowl, gently mix meat, Parmesan, breadcrumbs, eggs, garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk.
  3. Form mixture into a loaf and place in pan.
  4. Bake 40-45 min until internal temperature reaches 165°F (74°C).
  5. Meanwhile, melt butter in saucepan, sauté minced garlic, stir in Parmesan and parsley until thickened.
  6. Brush glaze over meatloaf and return to oven 5-7 min.
  7. Let rest 5 min, slice, garnish with extra parsley, and serve.

  • Sprinkle extra Parmesan for added flavor.
