- 2 pounds ground chicken, turkey, or lean pork
- 1 cup Parmesan cheese, shredded
- 1 cup panko or regular breadcrumbs
- 2 large eggs
- 4 cloves minced garlic
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried basil
- 1 tsp dried parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup whole milk or plant milk
- 2 tbsp unsalted butter for glaze
- For the Glaze: 1/4 cup Parmesan, 2 tbsp fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and prepare a loaf pan or lined baking sheet.
- In a large bowl, gently mix meat, Parmesan, breadcrumbs, eggs, garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk.
- Form mixture into a loaf and place in pan.
- Bake 40-45 min until internal temperature reaches 165°F (74°C).
- Meanwhile, melt butter in saucepan, sauté minced garlic, stir in Parmesan and parsley until thickened.
- Brush glaze over meatloaf and return to oven 5-7 min.
- Let rest 5 min, slice, garnish with extra parsley, and serve.
Notes
- Sprinkle extra Parmesan for added flavor.
- Excellent for meal prep and can be made ahead of time.
