- 1 cup all-purpose flour

- 1 large egg
- 1/2 cup unsalted butter
- 1 cup freshly grated carrots
- 4 ounces cream cheese, softened
- 1 large egg yolk
- 1/2 cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with foil, lightly sprayed.
- Melt butter and whisk in egg, brown sugar, salt, and vanilla.
- Sift in flour, baking powder, cinnamon, and nutmeg; stir gently.
- Fold in grated carrots.
- Beat cream cheese with egg yolk and granulated sugar until smooth.
- Pour carrot batter into pan and swirl cream cheese mixture over top.
- Bake 25–30 minutes until a toothpick comes out clean.
- Cool 2 hours before slicing into bars.
Notes
- Use freshly grated carrots for best moisture and sweetness.
- Do not overmix the batter to maintain a tender texture.
- Store in an airtight container in the fridge up to 5 days.
