- 2 large chicken breasts
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 ounces fettuccine pasta
Instructions
- Generously season both sides of the chicken breasts with Cajun seasoning.
- Heat a skillet over medium heat with a drizzle of oil. Sear chicken for 4–5 minutes per side until fully cooked. Remove and let rest.
- In a large pot, cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
- In the same skillet, reduce heat to low and pour in the heavy cream. Simmer and scrape up browned bits from the pan.
- Stir in Parmesan cheese until melted and smooth.
- Add the cooked fettuccine and toss to coat. Use reserved pasta water to loosen the sauce if needed.
- Slice the rested chicken into strips and serve over the creamy pasta. Garnish with extra Cajun seasoning or parsley if desired.
Notes
- Use freshly grated Parmesan for the creamiest, smoothest sauce. Pre-shredded cheese may not melt properly.
- To keep the sauce from breaking, avoid boiling the cream—just a gentle simmer is best.
- You can substitute Cajun seasoning with a homemade mix of paprika, cayenne, garlic powder, and thyme.
