An authentic Irish Farmhouse Apple Cake that’s delicious with or without traditional custard. Features a buttery cake base topped with thinly sliced Granny Smith apples and a crumbly streusel topping.

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 Tbsp whole milk or cream
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 3 Granny Smith apples, peeled and thinly sliced
  • Confectioner’s sugar for dusting
  • Streusel topping: 3/4 cup all-purpose flour, 1/4 cup rolled oats, 6 Tbsp cold butter, 1/2 cup granulated sugar
  • Custard sauce: 6 large egg yolks, 6 Tbsp sugar, 1 1/2 cups whole milk, 1 1/2 tsp vanilla

Instructions

  1. Preheat oven to 350°F and grease a 9-inch springform pan.
  2. Make custard sauce: whisk yolks and sugar, slowly add hot milk, cook over medium until thickened, stir in vanilla, sieve, chill.
  3. Make streusel topping: blend butter into flour, sugar, oats; refrigerate.
  4. Cream butter and sugar, beat in eggs one at a time.
  5. Fold in flour, baking powder, cinnamon, salt, and milk/cream.
  6. Pour batter into pan, top with sliced apples and streusel.
  7. Bake 50–60 minutes until lightly browned and a toothpick comes out clean.
  8. Cool, remove from pan, dust with confectioner’s sugar, serve with custard.

Notes

  • Use Granny Smith apples for tartness and structure.
  • Custard sauce can be made ahead and chilled.
  • Streusel topping adds extra texture and sweetness.
