Ingredients

  • 1.3 lb (600 g) chicken breast
  • 1/3 cup honey
  • 1/3 cup Dijon mustard
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup (120 ml) chicken broth

Instructions

  1. Season the chicken breasts with salt, pepper, and paprika.
  2. Heat olive oil on ‘Sauté’ mode in the Instant Pot. Brown the chicken 2–3 minutes per side. Remove and set aside.
  3. Sauté garlic in the Instant Pot for 30 seconds. Add honey, Dijon mustard, and chicken broth. Stir to combine.
  4. Return the chicken to the Instant Pot. Close the lid and set to ‘Manual/Pressure Cook’ for 10 minutes.
  5. Carefully perform a manual pressure release when cooking is complete.
  6. Plate the chicken and pour the honey mustard sauce over it. Serve warm.

Notes

  • For extra flavor, garnish with chopped parsley or a squeeze of fresh lemon juice.
  • Can be served with rice, mashed potatoes, or steamed vegetables for a complete meal.
