- 1.3 lb (600 g) chicken breast
- 1/3 cup honey
- 1/3 cup Dijon mustard
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup (120 ml) chicken broth
Instructions
- Season the chicken breasts with salt, pepper, and paprika.
- Heat olive oil on ‘Sauté’ mode in the Instant Pot. Brown the chicken 2–3 minutes per side. Remove and set aside.
- Sauté garlic in the Instant Pot for 30 seconds. Add honey, Dijon mustard, and chicken broth. Stir to combine.
- Return the chicken to the Instant Pot. Close the lid and set to ‘Manual/Pressure Cook’ for 10 minutes.
- Carefully perform a manual pressure release when cooking is complete.
- Plate the chicken and pour the honey mustard sauce over it. Serve warm.
Notes
- For extra flavor, garnish with chopped parsley or a squeeze of fresh lemon juice.
- Can be served with rice, mashed potatoes, or steamed vegetables for a complete meal.
