- 4 boneless, skinless chicken breasts (about 680 g)
- Salt and black pepper, to taste
- 1 tbsp (15 ml) olive oil
- ½ cup (120 ml) honey
- 1 cup (100 g) fresh or frozen cranberries
- 1 tbsp (15 ml) balsamic vinegar
- 1 tsp (2 g) fresh rosemary, finely chopped
- ½ cup (75 g) crumbled goat cheese
- 1 tbsp (15 g) chopped walnuts (optional)
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Season chicken breasts with salt and pepper, then sear them in a hot skillet with olive oil for 2–3 minutes on each side until lightly golden.
- In a small bowl, mix honey, balsamic vinegar, rosemary, and cranberries. Pour the mixture over the seared chicken in the baking dish.
- Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and top each chicken breast with crumbled goat cheese and chopped walnuts.
- Return to the oven for 3–5 minutes, just until the cheese softens. Garnish with fresh thyme before serving.
Notes
- Use frozen cranberries if fresh are unavailable.
- Adjust honey to taste for a sweeter glaze.
- Serve with rice, roasted vegetables, or a side salad for a complete meal.
