- 2 large chicken breasts
- 8 ounces fresh mozzarella (sliced or in mini balls)
- 1 pint cherry tomatoes
- 1/3 cup balsamic vinegar
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/4 cup fresh basil leaves, torn
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
- In a large skillet over medium heat, add olive oil and sear chicken for 4–5 minutes per side until golden brown. Remove from pan and set aside.
- In the same skillet, add a bit more olive oil and cook garlic for 30 seconds until fragrant. Pour in balsamic vinegar and let it reduce for 3–4 minutes.
- Add cherry tomatoes and cook for 4–5 minutes until they begin to burst. Return the chicken to the skillet, nestling it among the tomatoes.
- Top chicken with mozzarella slices or balls. Cover the skillet and cook 3–5 minutes until cheese is melted.
- Remove from heat, scatter fresh basil on top, and serve immediately.
Notes
- Make sure your balsamic vinegar is high-quality for the best flavor—thick and slightly sweet is ideal.
- Don’t skip the resting step after searing; it helps keep the chicken juicy.
- Use a lid while melting the mozzarella so it melts fully without overcooking the chicken.
