- 1 lb ground turkey (lean)
- 4 oz cream cheese, softened
- 5 oz fresh spinach, chopped or whole
- 1 cup cheddar cheese, freshly shredded
- 1 egg
- ½ tsp garlic powder
- ¼ tsp salt
- Black pepper, to taste
- Optional: ½ cup diced red bell peppers
- Optional: ¼ cup plain Greek yogurt
- Optional: mozzarella instead of cheddar
Instructions
- Preheat oven to 375°F and grease a 9×9 baking dish.
- Cook ground turkey in a skillet over medium heat for 6–8 minutes, breaking it up as it cooks.
- Stir in garlic powder, salt, and pepper. Add spinach and cook until wilted, about 2–3 minutes.
- Reduce heat to low and stir in softened cream cheese until melted and combined.
- Let mixture cool for 5 minutes, then stir in beaten egg and ½ cup cheddar cheese.
- Transfer mixture to prepared baking dish and top with remaining ½ cup cheddar.
- Bake uncovered for 20–25 minutes until bubbly and golden on top.
- Let rest 10 minutes before slicing and serving.
Notes
Use room temperature cream cheese to avoid lumps. Freshly shred cheese for better melting. Let casserole rest before slicing for cleaner portions. Freezes well — make a double batch for future meals.
