- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 cup mushrooms, sliced
- 1 tsp garlic powder
- Salt and black pepper to taste
- 1 cup shredded provolone or mozzarella cheese
- 3 cups cooked white or brown rice
- 2 green onions, sliced (optional for garnish)
Instructions
- In a skillet over medium heat, warm olive oil. Add onions, peppers, and mushrooms. Sauté 5–6 minutes until soft.
- Add ground beef, garlic powder, salt, and pepper. Cook 8–10 minutes until beef is browned and cooked through.
- Reduce heat to low, stir in shredded cheese until melted and creamy.
- Divide cooked rice into meal prep containers. Top with cheesy beef mixture.
- Garnish with green onions if desired. Store in fridge up to 4 days.
