- 1 lemon, juiced and zested
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, finely minced or 1 tsp dried garlic powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp + a pinch sea salt
- 1/4 tsp coarse black pepper
- 1 pound thin-sliced chicken breast
Garnish:
- 1/4 cup feta cheese
- 1/4 cup fresh chopped parsley
- Additional lemon wedges
Instructions
- Make the marinade: In a large mixing bowl, combine lemon zest and juice, olive oil, garlic, and all spices. Mix well and set aside 1/4 cup of marinade for later.
- Add chicken to remaining marinade. Toss to coat, cover, and refrigerate for 30 minutes.
- Heat a nonstick skillet over medium-high heat. Drizzle with olive oil and cook chicken until golden brown on the bottom. Flip and cook 3–4 more minutes or until cooked through.
- Transfer chicken to a serving plate. Drizzle with reserved marinade, sprinkle with parsley and feta cheese, and serve with lemon wedges.
Notes
- For extra flavor, marinate the chicken for up to 2 hours.
- Serve with a side of roasted vegetables or a Greek salad for a complete meal.
