Ingredients

  • 1 lemon, juiced and zested
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, finely minced or 1 tsp dried garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp + a pinch sea salt
  • 1/4 tsp coarse black pepper
  • 1 pound thin-sliced chicken breast

Garnish:

  • 1/4 cup feta cheese
  • 1/4 cup fresh chopped parsley
  • Additional lemon wedges

Instructions

  1. Make the marinade: In a large mixing bowl, combine lemon zest and juice, olive oil, garlic, and all spices. Mix well and set aside 1/4 cup of marinade for later.
  2. Add chicken to remaining marinade. Toss to coat, cover, and refrigerate for 30 minutes.
  3. Heat a nonstick skillet over medium-high heat. Drizzle with olive oil and cook chicken until golden brown on the bottom. Flip and cook 3–4 more minutes or until cooked through.
  4. Transfer chicken to a serving plate. Drizzle with reserved marinade, sprinkle with parsley and feta cheese, and serve with lemon wedges.

Notes

  • For extra flavor, marinate the chicken for up to 2 hours.
  • Serve with a side of roasted vegetables or a Greek salad for a complete meal.
