- 1.5 lb cod fillet, skinless
- Coating: 1/2 cup all-purpose flour, 1 tsp ground coriander, 3/4 tsp paprika, 3/4 tsp ground cumin, 3/4 tsp salt, 1/2 tsp black pepper, 1/4 tsp red pepper flakes
- Lemon Sauce: 6 tbsp fresh lemon juice, 5 tbsp olive oil, 2 tbsp unsalted butter, 6 garlic cloves minced
- For serving: 1/4 cup fresh parsley, chopped
Instructions
- Pat cod dry. Mix flour and spices for coating.
- Preheat oven to 400°F. Whisk lemon juice, olive oil, and melted butter. Add minced garlic.
- Dip cod in lemon-garlic sauce, dredge in flour-spice mix. Heat 2 tbsp oil in oven-safe skillet, sear cod 2 minutes per side.
- Pour remaining lemon-garlic sauce over cod, bake 8-10 minutes until opaque and flakes easily.
- Sprinkle parsley and serve with pan juices.
