  • 1.5 lbs Sirloin steak, cut into bite-sized pieces (Pat dry before seasoning)
  • 3 tbsp Butter (Room temperature)
  • 1 tsp Olive oil
  • 4 cloves Garlic, minced
  • 1 tsp Salt (Divided as needed)
  • 0.5 tsp Black pepper (Divided as needed)
  • 0.5 tsp Garlic powder (Divided as needed)
  • 0.5 tsp Smoked paprika (Divided as needed)
  • 0.5 tsp Dried thyme
  • 12 oz Penne pasta
  • 2 cups Heavy cream
  • 1 cup Shredded Pepper Jack cheese
  • 0.5 cup Shredded cheddar cheese
  • 0.5 cup Grated Parmesan cheese (plus extra for garnish)
  • 2 tbsp Butter (for sauce)
  • 0.5 tsp Smoked paprika (for sauce)
  • 0.5 tsp Garlic powder (for sauce)
  • 0.5 tsp Salt (for sauce)
  • 0.5 tsp Black pepper (for sauce)

Instructions

  1. Bring a large pot of salted water to a boil. Cook penne until al dente, drain, and reserve a small cup of pasta water.
  2. Pat steak bites dry and season with 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, and 1/2 tsp dried thyme.
  3. Heat 1 tsp olive oil in a large skillet over medium-high heat. Sear steak bites 2–3 minutes per side until browned. Remove and keep warm.
  4. Reduce heat to medium. Add 3 tbsp butter and minced garlic to skillet. Cook 30 seconds. Toss steak briefly in garlic butter and remove.
  5. Melt 2 tbsp butter in a saucepan over medium heat. Add heavy cream and bring to a low simmer.
  6. Gradually stir in Pepper Jack, cheddar, and Parmesan cheeses until smooth. Thin with reserved pasta water if needed.
  7. Season sauce with 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/2 tsp black pepper. Taste and adjust.
  8. Fold cooked penne into cheese sauce. Plate pasta and top with garlic butter steak bites. Garnish with extra Parmesan or herbs.
