- 1 pound ground beef
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh ginger, grated
- 2 tablespoons brown sugar
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1 dash Sriracha, to taste
- 4 medium zucchini, spiralized
- 2 chopped green onions, for garnish
- 1 tablespoon sesame seeds, optional
Instructions
- In a mixing bowl, whisk together brown sugar, soy sauce, grated ginger, sesame oil, and Sriracha. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Sauté minced garlic until fragrant.
- Add ground beef, breaking it into small pieces, and cook until browned, about 3-5 minutes.
- Pour the prepared sauce over the beef and stir well. Add spiralized zucchini and chopped green onions, mixing together.
- Simmer for 2 minutes until zucchini is heated through.
- Remove from heat and serve immediately, garnished with sesame seeds and extra green onions if desired.
Notes
- Store beef and zucchini noodles separately in airtight containers; beef stays fresh for up to 4 days, and zucchini noodles should be used within 2 days.
