- 4 pieces boneless, skinless chicken breasts
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
Instructions
- In a bowl, combine lime juice, olive oil, chili powder, garlic powder, cumin, salt, and pepper. Add chicken breasts and coat well. Marinate at least 15 minutes.
- Heat grill or grill pan over medium-high heat. Grill chicken 6–7 minutes per side until cooked through. Let rest before slicing.
- In a bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, and lime juice. Season with salt and pepper.
- Slice grilled chicken and top with avocado salsa. Serve immediately.
Notes
- Use fresh lime juice for best flavor.
- Add jalapeños for heat or other ingredients to the salsa for variations.
