Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a bowl, combine lime juice, olive oil, chili powder, garlic powder, cumin, salt, and pepper. Add chicken breasts and coat well. Marinate at least 15 minutes.
  2. Heat grill or grill pan over medium-high heat. Grill chicken 6–7 minutes per side until cooked through. Let rest before slicing.
  3. In a bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, and lime juice. Season with salt and pepper.
  4. Slice grilled chicken and top with avocado salsa. Serve immediately.

  • Use fresh lime juice for best flavor.
