- 1 lb boneless skinless chicken breasts
- ¼ cup honey
- 2 limes, juiced
- 1 tbsp olive oil
- 2 cups cooked white rice
- 1 ripe avocado, diced
- ¼ cup chopped fresh cilantro
- Salt and pepper to taste
- 1 garlic clove, minced
Instructions
- Whisk honey, lime juice, olive oil, minced garlic, salt, and pepper in a small bowl. This marinade is simple but gonna flavor that chicken real good.
- Put chicken breasts in a dish, pour marinade over, and let it rest at least 10 minutes while you prep everything else.
- Heat a skillet over medium heat. Then cook chicken for about 6-7 minutes each side until fully cooked.
- After cooking, set chicken aside and let it rest a few minutes.
- Slice chicken into strips, thick enough to stack but not clunky.
- In a mixing bowl, gently combine cooked rice, diced avocado, and chopped cilantro.
- Start stacking on plates by layering avocado rice then sliced chicken on top.
- Drizzle any leftover honey lime sauce on top and serve right away.
