Instructions
- Preheat oven to 350°F. Grease a loaf pan with nonstick spray.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat softened butter and sugar until smooth and creamy (about 2–3 minutes).
- Add eggs, milk, and vanilla extract, mixing until combined.
- Add dry ingredients to wet ingredients and mix until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
- Cover with foil during the last 20 minutes if the top browns too quickly.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
