- 1 lb ground beef or turkey
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 medium potatoes, thinly sliced
- 2 cups carrots, thinly sliced
- 1 can (15 oz) green beans, drained
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- 1 cup shredded cheddar cheese or cheese blend
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large skillet over medium heat, brown the ground beef (or turkey) with onion and garlic until fully cooked. Drain excess grease.
- In a mixing bowl, combine cooked beef mixture with potatoes, carrots, and green beans. Stir in cream of mushroom soup, milk, Italian seasoning, salt, and pepper. Mix well.
- Spread mixture evenly into prepared baking dish. Cover tightly with foil.
- Bake 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered an additional 15 minutes until cheese is melted and vegetables are tender.
- Let casserole rest 5 minutes before serving.
Notes
- Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 2 months.
