A comforting casserole with layers of ground beef, vegetables, and creamy mushroom sauce topped with melted cheese.

Ingredients

  • 1 lb ground beef or turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, thinly sliced
  • 2 cups carrots, thinly sliced
  • 1 can (15 oz) green beans, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 cup shredded cheddar cheese or cheese blend

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef (or turkey) with onion and garlic until fully cooked. Drain excess grease.
  3. In a mixing bowl, combine cooked beef mixture with potatoes, carrots, and green beans. Stir in cream of mushroom soup, milk, Italian seasoning, salt, and pepper. Mix well.
  4. Spread mixture evenly into prepared baking dish. Cover tightly with foil.
  5. Bake 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered an additional 15 minutes until cheese is melted and vegetables are tender.
  6. Let casserole rest 5 minutes before serving.

  • Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 2 months.
