- 1 lb lean ground beef
- 1 yellow onion, diced
- 1 taco seasoning packet
- 2 medium sweet potatoes, diced
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper, to taste
- 1 avocado, sliced
- 1 cup cottage cheese
- 2 tbsp hot honey
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on a baking sheet and roast 40–45 minutes.
- In a skillet over medium heat, sauté diced onion in olive oil until softened. Add ground beef and taco seasoning; cook until browned.
- Assemble bowls: roasted sweet potatoes on bottom, then ground beef mixture, avocado slices, and cottage cheese.
- Drizzle hot honey over each bowl and serve warm.
Notes
- Adjust seasoning and hot honey to taste.
- Can substitute sweet potatoes with roasted butternut squash or pumpkin.
- Meal prep by keeping components separate and combining when ready to serve.
