- 2 chicken leg quarters (or 4 drumsticks)
- 2 tbsp butter, melted
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp Italian seasoning
- ¾ tsp salt
- ½ tsp black pepper
- 1 tbsp lemon juice (optional)
- Dried parsley, for garnish
- 2 cups mashed potatoes
- 1–2 tbsp butter
- Milk or cream, optional
- Salt & pepper
- 2 cups baby carrots
- 1 tbsp butter
- 1 tsp minced garlic (optional)
- Salt & pepper
- Pinch dried parsley
Instructions
- Season & Sauce the Chicken: Mix butter, olive oil, garlic, paprika, onion powder, Italian seasoning, salt, pepper, and optional lemon. Rub over chicken.
- Roast Chicken: Bake at 400°F (205°C) for 40–50 minutes, until internal temp reaches 165°F. Spoon pan juices over chicken.
- Creamy Mashed Potatoes: Warm mashed potatoes with butter and milk/cream, season to taste.
- Glazed Baby Carrots: Simmer carrots in water 6–8 minutes until tender, then toss with butter, garlic, salt, pepper, and parsley.
- Plate: Serve mashed potatoes, carrots, and roasted chicken on a plate. Drizzle pan juices over and sprinkle parsley.
Notes
- Optional lemon juice brightens the chicken flavor.
- Use pre-made mashed potatoes for a quicker prep.
- Adjust seasoning on carrots and potatoes to taste.
