  • 1 tbsp lemon juice (optional)

  • 2 cups mashed potatoes
  • 12 tbsp butter
  • Milk or cream, optional
  • Salt & pepper
  • 2 cups baby carrots
  • 1 tbsp butter
  • 1 tsp minced garlic (optional)
  • Salt & pepper
  • Pinch dried parsley

Instructions

  1. Season & Sauce the Chicken: Mix butter, olive oil, garlic, paprika, onion powder, Italian seasoning, salt, pepper, and optional lemon. Rub over chicken.
  2. Roast Chicken: Bake at 400°F (205°C) for 40–50 minutes, until internal temp reaches 165°F. Spoon pan juices over chicken.
  3. Creamy Mashed Potatoes: Warm mashed potatoes with butter and milk/cream, season to taste.
  4. Glazed Baby Carrots: Simmer carrots in water 6–8 minutes until tender, then toss with butter, garlic, salt, pepper, and parsley.
  5. Plate: Serve mashed potatoes, carrots, and roasted chicken on a plate. Drizzle pan juices over and sprinkle parsley.
