- 15 oz ricotta
- 2 large eggs
- 4 cloves garlic, minced
- 1 1/2 tsp kosher salt
- 1 1/4 tsp black pepper
- 1 tsp dried oregano
- 2 lb 80/20 ground beef
- 1 1/4 cups breadcrumbs
- 3 tbsp unsalted butter, softened
- 3 tbsp mayonnaise
- 1/2 cup finely grated Parmesan
- 3 garlic cloves, grated
- 1/2 tsp red pepper flakes
- 2 tbsp fresh parsley, chopped
- 4 large hoagie rolls
- 18 oz marinara sauce
- 6 oz shredded mozzarella cheese
- Fresh parsley and extra Parmesan for garnish
Instructions
- Preheat oven to 400°F (200°C). Prepare garlic butter by mixing butter, mayonnaise, Parmesan, garlic, red pepper flakes, and parsley.
- In a bowl, combine ricotta, eggs, minced garlic, salt, pepper, oregano, ground beef, and breadcrumbs. Form into 55–70 meatballs.
- Bake meatballs 20–25 minutes until cooked through.
- Slice hoagie rolls and spread garlic butter on cut sides. Bake 10–12 minutes until golden.
- Toss cooked meatballs with marinara sauce. Fill rolls with sauced meatballs and top with mozzarella.
- Bake assembled subs 10 minutes until cheese melts. Garnish with parsley and extra Parmesan.
Notes
- Use an ice cream scoop for uniform meatballs.
- Ensure rolls are soft inside but crispy outside.
- Let cheese set slightly before serving.
