  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 1/2 tsp kosher salt
  • 1 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 2 lb 80/20 ground beef
  • 1 1/4 cups breadcrumbs
  • 3 tbsp unsalted butter, softened
  • 3 tbsp mayonnaise
  • 1/2 cup finely grated Parmesan
  • 3 garlic cloves, grated
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped
  • 4 large hoagie rolls
  • 18 oz marinara sauce
  • 6 oz shredded mozzarella cheese
  • Fresh parsley and extra Parmesan for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Prepare garlic butter by mixing butter, mayonnaise, Parmesan, garlic, red pepper flakes, and parsley.
  2. In a bowl, combine ricotta, eggs, minced garlic, salt, pepper, oregano, ground beef, and breadcrumbs. Form into 55–70 meatballs.
  3. Bake meatballs 20–25 minutes until cooked through.
  4. Slice hoagie rolls and spread garlic butter on cut sides. Bake 10–12 minutes until golden.
  5. Toss cooked meatballs with marinara sauce. Fill rolls with sauced meatballs and top with mozzarella.
  6. Bake assembled subs 10 minutes until cheese melts. Garnish with parsley and extra Parmesan.

Notes

  • Use an ice cream scoop for uniform meatballs.
  • Ensure rolls are soft inside but crispy outside.
  • Let cheese set slightly before serving.
