This 25-minute, full-flavored French Onion Chicken Casserole is perfect for busy weeknights. Tender chicken breasts are topped with caramelized onions and melted cheese for a satisfying, comforting meal.

Ingredients

  • 3 boneless, skinless chicken breasts (cut horizontally if thick)
  • 12 tsp garlic powder
  • 1 tsp dried oregano
  • Red crushed chili pepper flakes, optional
  • Pinch of salt and fresh cracked pepper
  • 1 cup shredded mozzarella cheese (or Gruyere)
  • 2 tbsp unsalted butter
  • 5 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1/41/2 cup chicken broth
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×12-inch baking dish.
  2. Melt butter in a skillet over medium-high heat. Add onions, salt, and pepper. Cook 5–8 minutes until soft.
  3. Reduce heat to medium and cook, stirring occasionally, until onions caramelize (~15 minutes). Add 1/4 cup broth if pan gets dry.
  4. Stir in minced garlic, cook 1 minute. Remove from heat.
  5. Season chicken with oregano, chili flakes, salt, pepper, and garlic powder. Arrange in baking dish.
  6. Top chicken with caramelized onions, sprinkle cheese. Bake 20–25 minutes until chicken is cooked and cheese bubbles. Broil 2 minutes for crispiness. Garnish with parsley and serve.
