- 3 boneless, skinless chicken breasts (cut horizontally if thick)
- 1–2 tsp garlic powder
- 1 tsp dried oregano
- Red crushed chili pepper flakes, optional
- Pinch of salt and fresh cracked pepper
- 1 cup shredded mozzarella cheese (or Gruyere)
- 2 tbsp unsalted butter
- 5 large onions, thinly sliced
- 3 cloves garlic, minced
- 1/4–1/2 cup chicken broth
- Fresh chopped parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×12-inch baking dish.
- Melt butter in a skillet over medium-high heat. Add onions, salt, and pepper. Cook 5–8 minutes until soft.
- Reduce heat to medium and cook, stirring occasionally, until onions caramelize (~15 minutes). Add 1/4 cup broth if pan gets dry.
- Stir in minced garlic, cook 1 minute. Remove from heat.
- Season chicken with oregano, chili flakes, salt, pepper, and garlic powder. Arrange in baking dish.
- Top chicken with caramelized onions, sprinkle cheese. Bake 20–25 minutes until chicken is cooked and cheese bubbles. Broil 2 minutes for crispiness. Garnish with parsley and serve.

- Serve with steamed vegetables or cauliflower rice for a complete meal.
