  • 6 leftover everything bagels, halved horizontally and cut or torn into bite-sized pieces
  • 6 ounces cooked ham, bacon, or sausage, cut or crumbled into small pieces
  • ¾ cup freshly grated sharp cheddar cheese, divided
  • 8 large eggs
  • 2 ½ cups milk
  • 1 teaspoon ground mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives, plus more for topping
  • 8 ounces reduced-fat or regular cream cheese, do not use fat-free

Instructions

  1. Lightly coat a 9×13-inch casserole dish with baking spray. Scatter bagel pieces in the bottom, then the ham. Sprinkle with ½ cup cheese.
  2. In a large bowl, combine eggs, milk, mustard, salt, and pepper. Pour over bagels and lightly press to absorb the egg.
  3. Cut cream cheese into small pieces and dot over casserole. Sprinkle 2 tablespoons chives and remaining ¼ cup cheese.
  4. Cover tightly and refrigerate 2 hours or overnight.
  5. Preheat oven to 350°F. Tent casserole with foil and bake covered 40 minutes.
  6. Remove foil, bake 15-20 more minutes until golden at edges and set in center. Let stand 10 minutes before serving.

Notes

  • If bagels are fresh or soft, toast at 300°F for 15 minutes to dry before using.
  • Casserole can be assembled and stored in refrigerator up to 1 day before baking.
  • To freeze: fully bake, cool, cover tightly, thaw overnight in refrigerator, then reheat covered at 350°F.
