- 4 boneless skinless chicken breasts
- 2 cups cooked rice (white or brown)
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup sour cream
- ½ cup shredded cheese (cheddar or mozzarella)
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt & black pepper to taste
- ¼ cup fresh parsley (chopped, for garnish)
Instructions
- Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil and butter in a skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add onion and garlic. Sauté for 2 minutes until fragrant.
- Pour in chicken broth and scrape up browned bits.
- Reduce heat to medium-low and add heavy cream, sour cream, and shredded cheese. Stir until melted and combined.
- Return chicken to the skillet and simmer for 10 minutes until sauce thickens and chicken is cooked.
- Spoon creamy chicken and sauce over cooked rice and garnish with fresh parsley.
Notes
- Use fresh garlic and onions for best flavor.
- Let the sauce thicken before serving for a richer texture.
- Sear the chicken well to lock in juices.
