  • 1 pound diced chicken breast
  • 2 cups fresh spinach
  • 8 ounces sliced mushrooms
  • 1 cup heavy cream
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces cooked pasta (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Dice chicken, slice mushrooms, rinse spinach. Cook pasta if using.
  3. In a skillet, heat olive oil over medium heat. Add chicken, season with salt, pepper, garlic powder, and onion powder. Sauté 5-7 minutes until lightly browned.
  4. Add mushrooms and cook 3-4 minutes. Add spinach and cook until wilted.
  5. Pour in heavy cream and stir. Simmer 3-5 minutes to thicken. Optionally add half of shredded cheese.
  6. Transfer mixture to a greased baking dish. Fold in pasta if using. Top with remaining cheese.
  7. Bake 25-30 minutes until cheese is melted and bubbly.
  8. Garnish with fresh herbs and serve warm.

Notes

Feel free to experiment with other vegetables or cheese types. Avoid overcooking chicken during sautéing. Grate cheese directly on top for a beautifully melted topping.
