- 1 pound diced chicken breast
- 2 cups fresh spinach
- 8 ounces sliced mushrooms
- 1 cup heavy cream
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces cooked pasta (optional)
Instructions
- Preheat oven to 375°F.
- Dice chicken, slice mushrooms, rinse spinach. Cook pasta if using.
- In a skillet, heat olive oil over medium heat. Add chicken, season with salt, pepper, garlic powder, and onion powder. Sauté 5-7 minutes until lightly browned.
- Add mushrooms and cook 3-4 minutes. Add spinach and cook until wilted.
- Pour in heavy cream and stir. Simmer 3-5 minutes to thicken. Optionally add half of shredded cheese.
- Transfer mixture to a greased baking dish. Fold in pasta if using. Top with remaining cheese.
- Bake 25-30 minutes until cheese is melted and bubbly.
- Garnish with fresh herbs and serve warm.
Notes
Feel free to experiment with other vegetables or cheese types. Avoid overcooking chicken during sautéing. Grate cheese directly on top for a beautifully melted topping.
