- 1 lb smoked sausage, sliced
- 2 lbs baby potatoes, quartered
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 packet ranch seasoning mix (1 oz)
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 ½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp olive oil or butter
- Fresh parsley, chopped
Instructions
- Heat olive oil or butter in skillet over medium heat. Cook sausage slices until lightly browned; remove and set aside.
- Cook onion 2–3 min until softened, add garlic 30 sec.
- Add potatoes, chicken broth, ranch seasoning, paprika, salt, and pepper. Cover and simmer 15–20 min until potatoes are tender.
- Stir in heavy cream and return sausage. Simmer 5 min to combine flavors.
- Reduce heat to low, mix in cheddar and mozzarella until melted and creamy.
- Garnish with chopped parsley before serving.
Notes
- Adjust seasoning and cheese amounts to taste.
- Can swap potatoes for sweet potatoes for a different flavor.
