  • 2 lbs baby potatoes, quartered
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 packet ranch seasoning mix (1 oz)
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tbsp olive oil or butter
  • Fresh parsley, chopped

Instructions

  1. Heat olive oil or butter in skillet over medium heat. Cook sausage slices until lightly browned; remove and set aside.
  2. Cook onion 2–3 min until softened, add garlic 30 sec.
  3. Add potatoes, chicken broth, ranch seasoning, paprika, salt, and pepper. Cover and simmer 15–20 min until potatoes are tender.
  4. Stir in heavy cream and return sausage. Simmer 5 min to combine flavors.
  5. Reduce heat to low, mix in cheddar and mozzarella until melted and creamy.
  6. Garnish with chopped parsley before serving.

Notes

  • Adjust seasoning and cheese amounts to taste.
  • Can swap potatoes for sweet potatoes for a different flavor.
