- 8 ounces cream cheese, softened
- 2 large chicken breasts
- ½ tsp garlic powder
- Salt & pepper to taste
- 1 tbsp butter
- 1 tbsp olive oil
- ½ medium onion, chopped
- 3 cloves garlic, minced
- ¾ cup chicken broth
- ½ tsp Italian seasoning
- ¼ tsp crushed red pepper flakes
- Fresh parsley, optional
Instructions
- Microwave cream cheese until very soft, cut into pieces, set aside.
- Slice chicken breasts in half lengthwise (4 thinner pieces), season with garlic powder, salt & pepper.
- Melt butter and oil in skillet over medium-high heat, cook chicken 5-6 minutes per side until golden and 165°F internal. Remove chicken.
- Reduce heat to medium, sauté onions 5-7 minutes until softened and lightly browned.
- Add garlic, cook 30 seconds. Add chicken broth, cream cheese, Italian seasoning, and crushed red pepper flakes; stir until smooth.
- Add chicken back, warm through. Adjust sauce thickness with more broth if needed, season to taste, sprinkle parsley, and serve.
