Ingredients

  • 8 ounces cream cheese, softened
  • 2 large chicken breasts
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp butter
  • 1 tbsp olive oil
  • ½ medium onion, chopped
  • 3 cloves garlic, minced
  • ¾ cup chicken broth
  • ½ tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes
  • Fresh parsley, optional

Instructions

  1. Microwave cream cheese until very soft, cut into pieces, set aside.
  2. Slice chicken breasts in half lengthwise (4 thinner pieces), season with garlic powder, salt & pepper.
  3. Melt butter and oil in skillet over medium-high heat, cook chicken 5-6 minutes per side until golden and 165°F internal. Remove chicken.
  4. Reduce heat to medium, sauté onions 5-7 minutes until softened and lightly browned.
  5. Add garlic, cook 30 seconds. Add chicken broth, cream cheese, Italian seasoning, and crushed red pepper flakes; stir until smooth.
  6. Add chicken back, warm through. Adjust sauce thickness with more broth if needed, season to taste, sprinkle parsley, and serve.
