- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1 cup rhubarb, diced small
- 1/2 cup dark chocolate chips
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat oven to 375°F (190°C). Line an 8×8 inch pan with parchment paper and lightly butter.
- In a medium bowl, whisk sugar, oil, eggs, and vanilla.
- In a large bowl, whisk flour, cocoa powder, baking powder, and salt.
- Combine wet and dry ingredients until just mixed.
- Fold in rhubarb, chocolate chips, and nuts. Batter will be thick.
- Spread evenly into prepared pan.
- Bake for 20–25 minutes, until a toothpick comes out clean.
- Cool for at least 10 minutes before cutting into 9 squares.
Notes
- Do not overbake to keep brownies moist and fudgy.
- If using frozen rhubarb, thaw and dry well before adding.
- Add 10–15 extra minutes to bake time if using frozen rhubarb.
