  • 1/2 teaspoon baking powder

  • 1 cup rhubarb, diced small
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8 inch pan with parchment paper and lightly butter.
  2. In a medium bowl, whisk sugar, oil, eggs, and vanilla.
  3. In a large bowl, whisk flour, cocoa powder, baking powder, and salt.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in rhubarb, chocolate chips, and nuts. Batter will be thick.
  6. Spread evenly into prepared pan.
  7. Bake for 20–25 minutes, until a toothpick comes out clean.
  8. Cool for at least 10 minutes before cutting into 9 squares.

Notes

  • Do not overbake to keep brownies moist and fudgy.
  • If using frozen rhubarb, thaw and dry well before adding.
  • Add 10–15 extra minutes to bake time if using frozen rhubarb.
