Ingredients

  • 2 cups cooked chicken (about 300g)
  • 2 cups fresh spinach (about 60g)
  • 1 cup mushrooms (about 70g)
  • 1 cup cream cheese (about 240g)
  • 1 cup shredded mozzarella cheese (about 120g)
  • 1/2 cup grated Parmesan cheese (about 50g)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil (about 15ml)
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté the mushrooms until softened.
  3. In a large bowl, combine cooked chicken, sautéed mushrooms, chopped spinach, cream cheese, half of the mozzarella, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  4. Transfer the mixture to a greased baking dish, spreading evenly.
  5. Top with remaining mozzarella cheese.
  6. Bake for 25–30 minutes until cheese is melted and bubbly.
