- 4 cups potatoes, peeled and diced

Instructions
- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic and cook for 3–4 minutes until softened.
- Cook beef: Add ground beef and cook until browned. Drain excess grease.
- Add potatoes: Stir in potatoes and chicken broth. Bring to a boil, then simmer for 15–20 minutes until potatoes are tender.
- Add dairy: Stir in milk and heavy cream. Heat gently without boiling.
- Add cheese: Gradually mix in cheddar cheese until melted and smooth.
- Season: Add salt and pepper to taste and simmer 5–10 minutes to thicken.
- Serve: Serve hot with optional toppings like cheese, bacon bits, or green onions.
