- 4 boneless, skinless chicken breasts
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 2 large ripe tomatoes, sliced
- 8 ounces fresh mozzarella, sliced
- 1/2 cup fresh basil leaves, torn
- 1/3 cup balsamic vinegar
- 1 tablespoon honey
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat; sear chicken 5–6 minutes per side until golden and internal temperature reaches 165°F (74°C). Remove and set aside.
- Reduce heat to medium, layer tomato slices atop chicken, then add mozzarella. Cover skillet 2–3 minutes until cheese melts.
- In a small saucepan, combine balsamic vinegar and honey; simmer 5–7 minutes until thickened.
- Sprinkle torn basil over chicken and drizzle with balsamic glaze before serving.
Notes
- Check internal chicken temperature to ensure it’s fully cooked.
- Store-bought balsamic glaze can be used for convenience.
