  • 2 large ripe tomatoes, sliced
  • 8 ounces fresh mozzarella, sliced
  • 1/2 cup fresh basil leaves, torn
  • 1/3 cup balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken 5–6 minutes per side until golden and internal temperature reaches 165°F (74°C). Remove and set aside.
  3. Reduce heat to medium, layer tomato slices atop chicken, then add mozzarella. Cover skillet 2–3 minutes until cheese melts.
  4. In a small saucepan, combine balsamic vinegar and honey; simmer 5–7 minutes until thickened.
  5. Sprinkle torn basil over chicken and drizzle with balsamic glaze before serving.
