- 1½–2 lbs chicken thighs, cubed into 1-inch pieces
- 1 Tbsp extra virgin olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp salt
- 2 Tbsp hot honey
- Bang Bang Sauce: 1 cup mayonnaise, 2 Tbsp lime juice, ⅔ cup Thai sweet chili sauce, ¼ cup Sriracha
Instructions
- Combine cubed chicken, oil, and seasonings in a bowl and toss to coat.
- Thread chicken onto skewers. Mix mayonnaise, sweet chili sauce, Sriracha, and lime juice to make sauce. Reserve half for after cooking.
- Brush remaining sauce over skewers and grill 15–20 min or air fry at 400°F 10–12 min, flipping halfway, until chicken reaches 165°F.
- Serve with reserved sauce and a drizzle of hot honey, if desired.
Notes
- Boneless, skinless breasts also work.
- Omit cayenne, hot honey, and use less Sriracha for milder flavor.
- Soak wooden skewers in water to prevent burning.
- Reheat in air fryer 3 min at 350°F or microwave gently; store up to 4 days in airtight container.
