Crockpot Pierogi Casserole combines frozen pierogies, sliced kielbasa, and a creamy, cheesy sauce for an easy, hearty comfort meal.

Ingredients

  • 3 packages cheddar pierogies, frozen
  • 4 cups chicken broth, divided
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese, divided
  • 1 lb kielbasa, sliced
  • Salt and pepper, to taste

Instructions

  1. In a 4-6 quart crockpot, combine 3 cups chicken broth, frozen pierogies, sliced kielbasa, and half of the shredded cheddar cheese. Distribute evenly.
  2. Cook on high for 3-4 hours or on low for 6 hours.
  3. About 30 minutes before serving, warm the cream cheese with the remaining 1 cup chicken broth until smooth.
  4. Stir the cream cheese mixture into the crockpot and sprinkle the remaining shredded cheddar on top.
  5. Cover and cook on low for another 30 minutes.
  6. Serve hot, optionally garnished with green onions.
