- 1 1/2 lb ground beef
- 1 small yellow onion, diced
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp kosher salt (plus more to taste)
- 1/2 tsp black pepper
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can beans (kidney or pinto), drained and rinsed
- 1 (10 oz) can diced tomatoes with green chilies
- 2 tbsp tomato paste
- 1/2 cup water or broth (beef or chicken)
- 8 hot dogs, sliced into 1/2-inch rounds
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese
- 1 (32 oz) bag frozen tater tots
- Nonstick spray (for slow cooker insert)
Instructions
- Spray slow cooker insert with nonstick spray.
- Cook ground beef and diced onion in a skillet over medium-high heat until beef is browned and onion soft, 7-10 minutes. Drain excess grease.
- Stir in chili powder, cumin, garlic powder, smoked paprika, salt, and pepper; cook 30 seconds.
- Add tomato sauce, beans, diced tomatoes with chilies, tomato paste, and water/broth. Stir and simmer 2-3 minutes.
- Pour mixture into slow cooker and spread evenly.
- Layer sliced hot dogs over chili.
- Sprinkle 1 cup cheddar and all mozzarella over hot dogs.
- Arrange frozen tater tots in a single layer on top.
- Cover and cook on LOW for 4-6 hours, until hot and bubbly.
- 10 minutes before serving, sprinkle remaining 1 cup cheddar on top and cover until melted.
Notes
- If slow cooker insert is oven-safe, broil 2-4 minutes to crisp tater tots; watch closely.
