A hearty, cheesy slow cooker casserole layering chili-seasoned beef, hot dogs, and crispy tater tots. Perfect for game day, family dinners, or anytime comfort food is needed.

Ingredients

  • 1 1/2 lb ground beef
  • 1 small yellow onion, diced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt (plus more to taste)
  • 1/2 tsp black pepper
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can beans (kidney or pinto), drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies
  • 2 tbsp tomato paste
  • 1/2 cup water or broth (beef or chicken)
  • 8 hot dogs, sliced into 1/2-inch rounds
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1 (32 oz) bag frozen tater tots
  • Nonstick spray (for slow cooker insert)

Instructions

  1. Spray slow cooker insert with nonstick spray.
  2. Cook ground beef and diced onion in a skillet over medium-high heat until beef is browned and onion soft, 7-10 minutes. Drain excess grease.
  3. Stir in chili powder, cumin, garlic powder, smoked paprika, salt, and pepper; cook 30 seconds.
  4. Add tomato sauce, beans, diced tomatoes with chilies, tomato paste, and water/broth. Stir and simmer 2-3 minutes.
  5. Pour mixture into slow cooker and spread evenly.
  6. Layer sliced hot dogs over chili.
  7. Sprinkle 1 cup cheddar and all mozzarella over hot dogs.
  8. Arrange frozen tater tots in a single layer on top.
  9. Cover and cook on LOW for 4-6 hours, until hot and bubbly.
  10. 10 minutes before serving, sprinkle remaining 1 cup cheddar on top and cover until melted.

Notes

  • If slow cooker insert is oven-safe, broil 2-4 minutes to crisp tater tots; watch closely.
