- 1 lb fresh, skinless salmon fillet
- 1 cup Panko breadcrumbs
- 1 large egg (or flax egg for vegan option)
- Salt and pepper, to taste
- Bang Bang Sauce: 1/2 cup mayonnaise or Greek yogurt, 1/4 cup sweet chili sauce, 1 tbsp sriracha, 1 tbsp lime juice
- Optional garnish: 2 tbsp chopped scallions, 1 tbsp sesame seeds
Instructions
- Preheat oven to 400°F (200°C).
- Cut salmon into 1-inch bite-sized pieces.
- Combine Panko with salt and pepper in a shallow bowl.
- Dip salmon pieces in beaten egg, then coat with Panko, place on lined baking sheet.
- Bake 12–15 minutes until golden brown and internal temp reaches 145°F (63°C).
- Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice for the Bang Bang sauce.
- Drizzle or toss baked salmon bites in sauce. Garnish with scallions or sesame seeds and serve immediately.
Notes
- Serve immediately after coating in sauce for best crunch.
- Optional: Serve with lime wedges for extra zing.
