- 1–2 large English cucumbers
- 2 tbsp extra-virgin olive oil
- 3 tbsp apple cider vinegar
- 1 tbsp Greek yogurt (or mayonnaise)
- 1 clove garlic, finely minced or crushed
- 1 tbsp minced fresh dill, plus more for garnish
- 2 tbsp red onion, sliced
- Salt and freshly ground black pepper, to taste
Instructions
- Peel and thinly slice cucumbers; combine with sliced red onion in a large dish.
- In a jar, mix olive oil, apple cider vinegar, Greek yogurt, garlic, dill, salt, and pepper. Shake to emulsify and pour over cucumbers.
- Cover and marinate 2–3 hours on the counter or longer in the fridge. Bring to room temperature before serving. Garnish with additional dill.
