Fresh cucumber salad coated in a creamy dill sauce, perfect for a light, refreshing side or snack.

Ingredients

  • 12 large English cucumbers
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp Greek yogurt (or mayonnaise)
  • 1 clove garlic, finely minced or crushed
  • 1 tbsp minced fresh dill, plus more for garnish
  • 2 tbsp red onion, sliced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Peel and thinly slice cucumbers; combine with sliced red onion in a large dish.
  2. In a jar, mix olive oil, apple cider vinegar, Greek yogurt, garlic, dill, salt, and pepper. Shake to emulsify and pour over cucumbers.
  3. Cover and marinate 2–3 hours on the counter or longer in the fridge. Bring to room temperature before serving. Garnish with additional dill.
