- 8 oz (225g) chicken breast, diced
- 2 oz (50g) cream cheese, at room temperature
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 8 oz (225g) broccoli florets
- 4 oz (110g) sweet corn kernels, fresh or frozen
- 2 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp red chili pepper flakes
Instructions
- Marinate diced chicken with Italian seasoning, paprika, salt, and chili pepper flakes.
- Blanch broccoli in boiling water, drain, and cool in ice water. Set aside.
- In a skillet over medium-high heat, cook onion 1–2 minutes until translucent.
- Add chicken in a single layer, cook 1 minute undisturbed, then stir until golden but not fully cooked.
- Add sweet corn and garlic; stir. Deglaze pan with 1/4 cup water. Add cream cheese and melt gently.
- Add blanched broccoli and simmer 3–4 minutes. Adjust seasoning.
- Sprinkle more chili flakes and serve over rice, pasta, or on its own.
