Ingredients

  • 8 oz (225g) chicken breast, diced
  • 2 oz (50g) cream cheese, at room temperature
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 8 oz (225g) broccoli florets
  • 4 oz (110g) sweet corn kernels, fresh or frozen
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp red chili pepper flakes

Instructions

  1. Marinate diced chicken with Italian seasoning, paprika, salt, and chili pepper flakes.
  2. Blanch broccoli in boiling water, drain, and cool in ice water. Set aside.
  3. In a skillet over medium-high heat, cook onion 1–2 minutes until translucent.
  4. Add chicken in a single layer, cook 1 minute undisturbed, then stir until golden but not fully cooked.
  5. Add sweet corn and garlic; stir. Deglaze pan with 1/4 cup water. Add cream cheese and melt gently.
  6. Add blanched broccoli and simmer 3–4 minutes. Adjust seasoning.
  7. Sprinkle more chili flakes and serve over rice, pasta, or on its own.
