Ingredients
- Chimichurri Sauce: ½ cup olive oil, ¼ cup red wine vinegar, ½ medium shallot minced, 1 small jalapeño minced, ½ cup fresh parsley minced, 1 tsp garlic minced, 1 ½ tsp fresh oregano minced, 1 tsp fresh basil minced, 1 tsp fresh cilantro minced, ½ tsp fresh thyme minced, ¼ tsp kosher salt, pinch red pepper flakes
- Steak Skewers: wooden skewers soaked 30 minutes, 1 pound steak cut into 1-inch cubes, 1 tsp kosher salt, ½ tsp black pepper, 1 cup chimichurri sauce divided
Instructions
- Chimichurri Sauce: Combine all ingredients in a bowl. Rest at room temperature 1-2 hours. Store in fridge up to 1 week, stir before using.
- Steak Skewers: Season steak cubes with salt and pepper. Toss with ¼ cup chimichurri, reserve remaining sauce.
- Thread steak onto skewers leaving space between cubes. Preheat air fryer to 400°F.
- Air fry skewers 4-6 minutes, flipping halfway, until desired doneness. Brush with reserved sauce and serve.
Notes
- Grilling: Cook 3-4 min per side on medium-high, brush with sauce.
- Oven: Roast 8-12 min at 400°F, flipping halfway, brush with sauce.
- Skillet: Cook 4-6 min per side over medium-high heat, brush with sauce.
