- 2 medium zucchinis, sliced into ½ inch rounds
- 2 tbsp olive oil
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and grease a baking dish with nonstick spray.
- Season chicken breasts with salt, pepper, and half of the Italian seasoning.
- Arrange chicken in the baking dish and surround with zucchini slices.
- Drizzle with olive oil and sprinkle garlic powder and remaining Italian seasoning on top.
- Cover generously with shredded mozzarella cheese.
- Bake for 30-35 minutes until chicken reaches 165°F (75°C) and is golden brown.

- Ensure chicken is fully cooked for safety (165°F internal temperature).
- Optional: Add extra herbs or spices to taste.
