- 2 large boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tbsp olive oil or butter (for cooking chicken)
- 8 oz (225 g) egg noodles or pasta of choice
- 3 tbsp unsalted butter
- 1–2 cloves garlic, minced (optional)
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil or butter in a skillet over medium heat. Cook chicken 5–6 minutes per side until golden brown and fully cooked. Remove from skillet and let rest, then slice.
- Bring a pot of salted water to a boil. Cook egg noodles according to package instructions. Drain.
- In the same skillet, melt butter over medium heat. Add garlic (if using) and cook for 1 minute until fragrant. Toss in cooked noodles and Parmesan cheese. Mix until noodles are coated.
- Plate buttered noodles and top with sliced chicken. Garnish with chopped parsley and additional Parmesan if desired.
Notes
- Optional: add steamed vegetables like broccoli or peas for extra color and nutrition.
- Can use chicken thighs if preferred; adjust cooking time accordingly.
