- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream, optional

Instructions
- Preheat oven to 400°F (200°C).
- Prep potatoes and slice smoked sausage into 1/4-inch rounds.
- Mix ranch seasoning, garlic powder, onion powder, and black pepper. Toss potatoes with olive oil and half the seasoning mixture.
- Spread potatoes on a baking sheet in a single layer. Scatter sausage slices evenly.
- Roast for 35-40 minutes, stirring halfway through.
- Remove from oven, sprinkle with cheddar cheese, and bake an additional 5 minutes until cheese melts.
- Garnish with parsley and serve with sour cream if desired.
