  • 1 pound ground beef
  • 1 tablespoon avocado oil
  • 2 teaspoons cornstarch
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 garlic clove, finely grated
  • 1 teaspoon fresh ginger, finely grated
  • 1/3 cup peanut butter
  • 1/3 cup soy sauce
  • 1/4 cup warm water
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 12 tablespoons sugar, to taste
  • 1 tablespoon chili garlic sauce
  • Juice of 1/2 lime
  • 6 ounces egg noodles
  • 5 green onions, thinly sliced (white and green parts separated)
  • 23 cups sliced vegetables (bell pepper, spinach, mushrooms, cabbage, basil, etc.)
  • Freshly ground black pepper, for serving
  • Lime wedges, for serving

Instructions

  1. In a bowl or blender, combine the peanut butter, soy sauce, warm water, rice vinegar, sesame oil, sugar, chili garlic sauce, and lime juice. Mix until smooth and creamy. Set aside.
  2. Heat the avocado oil in a large skillet over high heat. Add the ground beef and cook undisturbed for 2–3 minutes to build a deep brown crust. Break it apart and continue cooking until mostly cooked through.
  3. Sprinkle cornstarch over the beef and stir quickly for about 30 seconds. Add garlic, ginger, soy sauce, and brown sugar. Cook 1 minute, stirring constantly, until glossy. Transfer to a bowl and keep warm.
  4. In the same skillet, sauté white parts of green onions and vegetables over medium-high heat until just tender.
  5. Cook noodles according to package directions. Drain and rinse briefly with cold water.
  6. Add noodles to skillet with vegetables. Pour in most of the peanut sauce and toss 1–2 minutes until evenly coated.
  7. Divide noodles among plates and top with caramelized beef. Finish with green onion tops, black pepper, and a squeeze of lime.

Notes

  • Peanut sauce and caramelized beef can be prepped up to 3 days in advance. Store in airtight containers and assemble fresh when ready to serve.
