- 1 pound ground beef
- 1 tablespoon avocado oil
- 2 teaspoons cornstarch
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 garlic clove, finely grated
- 1 teaspoon fresh ginger, finely grated
- 1/3 cup peanut butter
- 1/3 cup soy sauce
- 1/4 cup warm water
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1–2 tablespoons sugar, to taste
- 1 tablespoon chili garlic sauce
- Juice of 1/2 lime
- 6 ounces egg noodles
- 5 green onions, thinly sliced (white and green parts separated)
- 2–3 cups sliced vegetables (bell pepper, spinach, mushrooms, cabbage, basil, etc.)
- Freshly ground black pepper, for serving
- Lime wedges, for serving
Instructions
- In a bowl or blender, combine the peanut butter, soy sauce, warm water, rice vinegar, sesame oil, sugar, chili garlic sauce, and lime juice. Mix until smooth and creamy. Set aside.
- Heat the avocado oil in a large skillet over high heat. Add the ground beef and cook undisturbed for 2–3 minutes to build a deep brown crust. Break it apart and continue cooking until mostly cooked through.
- Sprinkle cornstarch over the beef and stir quickly for about 30 seconds. Add garlic, ginger, soy sauce, and brown sugar. Cook 1 minute, stirring constantly, until glossy. Transfer to a bowl and keep warm.
- In the same skillet, sauté white parts of green onions and vegetables over medium-high heat until just tender.
- Cook noodles according to package directions. Drain and rinse briefly with cold water.
- Add noodles to skillet with vegetables. Pour in most of the peanut sauce and toss 1–2 minutes until evenly coated.
- Divide noodles among plates and top with caramelized beef. Finish with green onion tops, black pepper, and a squeeze of lime.
Notes
- Peanut sauce and caramelized beef can be prepped up to 3 days in advance. Store in airtight containers and assemble fresh when ready to serve.
- Customize vegetables based on season or what’s in your fridge.
