- 1 cup uncooked long-grain white rice
- 1 lb ground beef
- 1 small diced onion
- 4 minced garlic cloves
- 1/2 cup milk
- 1 cup shredded cheddar
- 1/2 cup Parmesan, grated
- 3 cups beef broth (low sodium)
- Salt and pepper to taste
- 1 tsp Italian seasoning
- 3 tbsp butter
- Fresh parsley (optional, 2 tbsp chopped)
Instructions
- Melt 1 tbsp butter in a skillet over medium heat. Sauté onion for 3–4 minutes until softened.
- Add ground beef, cook until browned; drain excess fat.
- Add garlic and cook 1 minute until fragrant.
- Stir in rice, beef broth, Italian seasoning, salt, and pepper. Bring to boil, then reduce heat to low. Cover and cook 18–20 minutes until rice is tender.
- In a small saucepan, melt remaining 2 tbsp butter. Stir in cheddar, Parmesan, and milk until smooth.
- Pour cheese sauce into skillet with beef and rice. Stir to combine and cook a few minutes uncovered.
- Garnish with parsley if desired and serve warm.
