  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 1/2 cup milk
  • 1 cup shredded cheddar
  • 1/2 cup Parmesan, grated
  • 3 cups beef broth (low sodium)
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley (optional, 2 tbsp chopped)

Instructions

  1. Melt 1 tbsp butter in a skillet over medium heat. Sauté onion for 3–4 minutes until softened.
  2. Add ground beef, cook until browned; drain excess fat.
  3. Add garlic and cook 1 minute until fragrant.
  4. Stir in rice, beef broth, Italian seasoning, salt, and pepper. Bring to boil, then reduce heat to low. Cover and cook 18–20 minutes until rice is tender.
  5. In a small saucepan, melt remaining 2 tbsp butter. Stir in cheddar, Parmesan, and milk until smooth.
  6. Pour cheese sauce into skillet with beef and rice. Stir to combine and cook a few minutes uncovered.
  7. Garnish with parsley if desired and serve warm.
