- 4 (6 oz) skinless salmon fillets
- 8 oz garlic & herb Boursin cheese
- 1 cup panko breadcrumbs
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 2 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Place salmon fillets in dish, skin side down, and season with salt and pepper.
- Spread Boursin cheese generously over each fillet.
- In a bowl, mix panko breadcrumbs with olive oil, parsley, and thyme until well-coated.
- Sprinkle breadcrumb mixture evenly over the Boursin-covered salmon.
- Bake for 15-20 minutes or until salmon flakes easily with a fork.
Notes
- Substitute Boursin cheese with goat cheese or cream cheese if desired.
- Add spinach or sun-dried tomatoes to the cheese for extra flavor.
- Serve alongside roasted vegetables or a light salad for a complete meal.
