  • 1 pound chicken meatballs or rotisserie chicken
  • 1 medium avocado
  • 2 cloves garlic, minced
  • 1 cup cilantro
  • 2 tablespoons vinegar or lime juice
  • 12 fresh jalapeños, optional
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato wedges with taco seasoning and spread on a baking sheet. Roast 30 minutes.
  2. Bake chicken meatballs according to package or shred rotisserie chicken.
  3. Blend avocado, garlic, cilantro, vinegar, and olive oil until smooth to make avocado mojo sauce.
  4. Assemble bowls: layer roasted sweet potatoes, chicken, and drizzle with avocado mojo sauce.
