- 2 medium sweet potatoes, cut into wedges
- 2 tablespoons taco seasoning
- 1 pound chicken meatballs or rotisserie chicken
- 1 medium avocado
- 2 cloves garlic, minced
- 1 cup cilantro
- 2 tablespoons vinegar or lime juice
- 1–2 fresh jalapeños, optional
- 2 tablespoons olive oil
Instructions
- Preheat oven to 425°F (220°C). Toss sweet potato wedges with taco seasoning and spread on a baking sheet. Roast 30 minutes.
- Bake chicken meatballs according to package or shred rotisserie chicken.
- Blend avocado, garlic, cilantro, vinegar, and olive oil until smooth to make avocado mojo sauce.
- Assemble bowls: layer roasted sweet potatoes, chicken, and drizzle with avocado mojo sauce.
